Complete Protein Recipe
Share a VEGAN recipe that is a complete protein source. Please note that vegan recipes have no animal sources of protein, including dairy. Find a recipe that you love and tastes delicious that you would like your classmates to know about. Please post the entire recipe in your response (not just a link to a recipe). If you would like, you can make the recipe and take a photo for 5 points extra credit!
Please note: You do not need to buy ‘vegan’ versions of milk, meat, or eggs to do this assignment at all, so please don’t do that! The challenge here is to use foods you already have in your pantry and try to make a vegan dish that is a complete protein. Please review slide 41 on Complementary Proteins in our Proteins Lecture for information about foods that you can pair to provide a complete protein. Be sure to:
- Identify the main protein sources in your recipe
- List which protein source contains which of the 9 essential amino acids. List the essential amino acids and the percentage/amounts that are present in the protein.
- Which protein source contains a limiting amino acid and what is it?
- To answer the above questions you can search for the limiting amino acid composition for your vegan meal components online. You can also go to USDA Food Data Central Links to an external site.
- In this example I have searched for the food: “kidney beans, raw” and selected the data from the SR Legacy database. This database will provide you with the percentages for all amino acid components for your food item: Food Data Central-Kidney Beans, RawLinks to an external site.
- 5 points extra credit if you make the recipe and post a picture of it for the class to see (you or a family member/pet must be in the picture…but don’t let the pet eat your nice recipe!) Please be sure to comment on at least 3 other student posts for full credit.
